Baked Salmon … and wine

Baked salmon, with its rich and flaky texture, accentuates different tasting notes in red and rosé wines. In red wine, the savory and slightly oily nature of the salmon can complement the wine’s bold flavors and tannins. For rosé wine, the dish harmonizes with the wine’s acidity and red fruit notes, creating a refreshing and balanced pairing.

Ingredients:

For the Baked Salmon:

      • 4 salmon fillets (about 6 ounces each)
      • Salt and black pepper, to taste
      • 2 tablespoons olive oil
      • 2 cloves garlic, minced
      • 1 teaspoon lemon zest
      • 1 tablespoon lemon juice
      • 1 teaspoon Dijon mustard
      • 1 teaspoon honey or maple syrup
      • Fresh herbs (such as dill, parsley, or thyme), chopped

For the Greens:

      • 6 cups mixed salad greens (spinach, arugula, kale, etc.)
      • 1 cup optionally cherry tomatoes, halved
      • 1 cucumber, sliced
      • 1/4 red onion, thinly sliced
      • 1 avocado, sliced

For the Dressing:

      • 3 tablespoons extra-virgin olive oil
      • 1 tablespoon balsamic vinegar
      • 1 teaspoon Dijon mustard
      • Salt and black pepper, to taste

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Baked Salmon:
    • Pat the salmon fillets dry with paper towels and place them on a baking sheet lined with parchment paper.
    • Season the salmon with salt and black pepper.
  3. Make the Marinade:
    • In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, honey (or maple syrup), and chopped fresh herbs.
  4. Marinate the Salmon:
    • Brush the salmon fillets with the marinade, ensuring they are well coated.
  5. Bake the Salmon:
    • Bake the salmon in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  6. Prepare the Greens:
    • While the salmon is baking, prepare the salad greens by tossing together mixed greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
  7. Make the Dressing:
    • In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper to create the dressing.
  8. Assemble the Dish:
    • Arrange the baked salmon fillets on top of the bed of mixed greens.
    • Drizzle the salad with the prepared dressing.
  9. Serve:
