Savory Goat Cheese Wild Mushroom Pizza with Truffle Oil
A delicious recipe combining Goat Cheese and Mushrooms creating Pizza with Truffle Oil – and for added zest add Wild Shrimp.
Ingredients:
- 1 pound pizza dough (store-bought or homemade)
- Cornmeal or flour (for dusting)
- 1/2 cup goat cheese, crumbled
- 1 cup wild mushrooms
- at your option, add 1 cup wild-caught shrimp, peeled and deveined
- 2 tablespoons truffle oil
- 1 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- Fresh arugula (for topping after baking)
- Salt and black pepper, to taste
-
- 1/2 cup tomato sauce
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
- Preheat the Oven:
Preheat your oven to the highest temperature your oven can reach (usually around 475-500°F or 245-260°C). - Prepare the Mushrooms and, optionally Shrimp:
Fry the mushrooms until cooked. If you are adding shrimp, season the shrimp with salt and black pepper. Heat a skillet over medium heat, add a bit of olive oil, and cook the shrimp for 2-3 minutes per side or until they are opaque and cooked through. - Prepare the Pizza Dough:
Roll out the pizza dough on a lightly floured surface or on cornmeal to prevent sticking. Transfer the rolled-out dough to a pizza stone or a baking sheet. - Prepare the Sauce:
In a small bowl, mix together tomato sauce, minced garlic, dried oregano, salt, and black pepper. Spread this sauce evenly over the pizza dough. - Add Toppings:
- Sprinkle crumbled goat cheese over the tomato sauce.
- Distribute the cooked mushrooms (and if applicable, the shrimp), cherry tomato halves, and sliced black olives over the pizza.
- Drizzle with Truffle Oil:
Drizzle truffle oil over the pizza, focusing on the edges for a nice aroma. - Bake:
Place the pizza in the preheated oven and bake for 12-15 minutes or until the crust is golden and the toppings are bubbly and lightly browned. - Finish with Fresh Arugula:
Remove the pizza from the oven and immediately sprinkle fresh arugula over the top. The residual heat will wilt the arugula slightly. - Slice and Serve:
Allow the pizza to cool for a few minutes before slicing. Serve the Goat Cheese Mushroom and Wild Shrimp Pizza with Truffle Oil immediately.
