For the Pork Belly:
- 1.5 to 2 pounds pork belly, skin on
- Salt and black pepper, to taste
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon vegetable oil
For the Spinach Salad:
- 6 cups fresh baby spinach leaves, washed and dried
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup pine nuts, toasted
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). - Score and Season the Pork Belly:
Pat the pork belly dry with paper towels. Score the skin of the pork belly in a crosshatch pattern. Season both sides with salt and black pepper. - Mix the Marinade:
In a bowl, mix together soy sauce, hoisin sauce, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. - Marinate the Pork Belly:
Place the pork belly in a large resealable bag or a shallow dish. Pour half of the marinade over the pork, ensuring it coats all sides. Marinate for at least 30 minutes or overnight in the refrigerator. - Sear and Roast:
Heat vegetable oil in an ovenproof skillet over medium-high heat. Sear the pork belly, skin side down, until the skin is crispy and golden brown. Transfer the skillet to the preheated oven and roast for about 45-60 minutes or until the internal temperature reaches 145°F (63°C). - Baste with Marinade:
While roasting, baste the pork belly with the remaining marinade every 15-20 minutes. - Rest and Slice:
Allow the pork belly to rest for 10 minutes before slicing it into thick slices.
- Prepare Salad Ingredients:
In a large bowl, combine fresh baby spinach leaves, cherry tomatoes, cucumber, red onion, feta cheese, and toasted pine nuts. - Make the Dressing:
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper. - Assemble the Salad:
Drizzle the dressing over the salad and toss until well coated. - Serve:
Arrange the sliced pork belly on top of the spinach salad or serve it on the side. Garnish with additional feta cheese and pine nuts if desired.
